Hummus

Hummus is a yummy dish made from chickpeas that comes from the Middle East. I love to eat it as it is both delicious and healthy. It is quick and easy to put together, as long as you have everything readily on hand. Since I get dry chickpeas, I have to soak and pressure cook them first but if you can get them canned then you can skip the cooking step.
The original recipe calls for tahini, which I believe is a sesame seed butter, and olive oil. Since I never have either on hand, I skip the tahini and use my usual cooking oil. Now, I never measure my ingredients, so if you want exact measurements, look up a recipe. Here is how I do it.

Fill blender 3/4 full of chickpeas.
Add roughly 3 to 4 cloves of garlic, or about a tablespoon of garlic paste.
Add some olive oil, about a 1/4 cup, plus the same amount of water.
Add some lemon juice, not too much.
Salt to taste.

Blend together on high until smooth. If it is too thick or doesn’t blend well, add a little more water. Taste it and increase the seasonings if needed. You want to taste everything but none of the ingredients should overpower each other.
Put into a serving bowl. I usually decorate it with some sesame seeds sprinkled on top and some corriander leaves. Traditionally you should also drench the top with olive oil.
